One should be oily fish, such as salmon or mackerel. This easy to put together dish provides one portion of fish and the beauty of a tray bake is that once you’ve chopped all the veg, you can relax and let the oven do the rest.” Serves: 4 Preparation time: 10 minutes Cooking time : 50 minutes • 2 tbsp olive oil • 12 new potatoes, sliced in half • 1 courgette, cut into chunks • 1 red pepper, cut into chunks • 1 yellow pepper, cut into chunks • 150g cherry tomatoes • 50g pitted black olives • 5 cloves of garlic • 2 tbsp oregano • 4 cod fillets (other white fish would also work well) • salt and ground black pepper to taste Method 1 Pre heat your oven to 200°C /180°C Fan or Gas Mark 6. Add a couple of tablespoons of olive oil to an oven proof dish and place the dish in the oven 2 Slice 12 new potatoes in half. Add to the oven proof dish and give it a good stir so the potatoes are coated in the oil. Be careful as it will be hot. Cook until golden at the edges, around 15 minutes 3 While the potatoes are cooking, chop the peppers and courgette into bite sized chunks. Add to a bowl along with the cherry tomatoes, pitted black olives, five garlic cloves and a tablespoon or two of dried oregano to your taste 4 Once the potatoes have turned golden at the edges, add the contents of the bowl to the dish, stir to coat in oil and cook for another 15-20 minutes 5 Remove the dish from the oven, give the veg and potatoes a stir, and place the 4 cod fillets on top and bake for around 15 minutes or until the fish is cooked 6 Once cooked, remove from oven and season with salt and ground black pepper to taste.
