Simple coffee and cream cake Baking is a great activity to do with kids, and this easy all in one recipe will be your go to for birthdays, puddings, and parties of all kinds! You can omit the coffee and replace with a different flavour depending on what you fancy. For lemon, add the zest and juice of one lemon. Use 1 tsp of vanilla essence for a classic sponge, and for chocolate remove 25g of flour and replace with gluten free cocoa powder. Preparation time : 10 minutes Cooking time: 25 minutes Serves: 10-12 • 225g gluten free self-raising flour* • 1 tsp baking powder* • ½ tsp xanthan gum (optional) • 225g softened margarine • 225g caster sugar • 4 eggs • 1 tbsp instant coffee Filling • 142ml double cream, whipped • icing sugar for dusting Method 1 Preheat the oven to 180ᵒ C/160ᵒC Fan/Gas Mark 4. Lightly grease 2 x 8” sandwich tins 2 In a large bowl, mix all the ingredients for the sponge together. Beat until smooth and then pour into the prepared tins 3 Bake for 25 minutes, or until a skewer inserted into the cake centre comes out clean 4 Leave to cool. Then build your cake: top one layer with whipped cream and place the other on top. Dust with icing sugar to serve.
