It’s even better using homemade gluten free gnocchi. Preparation time: 20 minutes Cooking time: 5 minutes Serves: 4 • 2 tbsp oil • 1 onion, finely diced • 2 garlic cloves, crushed • 1 yellow pepper, sliced • 1 red pepper, sliced • ½ tsp chilli flakes (optional) • 1 tsp dried Italian herbs • 400g tinned chopped tomatoes • 50g mascarpone • 100ml milk • salt and pepper to season • 1 pack of gluten free gnocchi* or 1 quantity of our homemade recipe • 50g pecorino or cheese of your choice Method 1 Heat the oil in a saucepan. Add the onions and cook on a medium heat for 5 minutes, without adding colour to them. Add the garlic and peppers and cook for a further 3-4 minutes 2 Add the chilli flakes, Italian herbs, tinned tomatoes, and bring to the boil. Add the milk and mascarpone, then season to taste 3 To cook the gnocchi, place in boiling, salted water. Boil them for 1 minute, or until they float, then strain 4 Grease an ovenproof dish, add the gnocchi and cover with sauce. Lastly, top with the cheese and grill for 5 minutes. Serve with a fresh green salad. Why not let them help with the shaping and cutting of the gnocchi pillows. The amount of flour needed for this recipe depends on the type of potato that is being used, so add it in stages. It shouldn’t feel sticky so it can be shaped easily 5 Divide the dough into three equal pieces. Roll a piece at a time into long, 2cm thick cylinders. Use the flour to lightly coat the surface 6 Keep the surface well floured as you don’t want the gnocchi to stick. Sprinkle some more flour onto two large baking sheets. With a sharp knife, cut across the strip every 1cm to create little gnocchi pillows. Place the gnocchi in a single layer on the baking sheets and repeat until you run out of dough 7 To cook your gnocchi, place in salted water for 1 minute, or until they float, then strain.
