30 | www.coeliac.org.uk Asian BBQ pork steaks Save time by making this great marinade in advance. Make sure you keep your meat chilled in the marinade until the BBQ is ready. Preparation time: 20 minutes Cooking time: 10 minutes Serves: 4 • 70g brown sugar • 60ml hoisin sauce* • 60ml oyster sauce* • 2 tbsp gluten free soy sauce* • 2 tbsp dry sherry • 2 cloves garlic, finely chopped • 2 tsp Chinese five spice • ¾ tsp salt • 8 pork steaks • 1 tsp sesame seeds Method 1 Place all the ingredients, apart from the pork, into a pan. Cook over medium heat until the sugar has dissolved. Simmer for 10 minutes, u ntil it coats the back of a spoon. Allow to cool 2 Place the BBQ sauce in a large plastic zip-seal bag and put the pork steaks inside. Once you have sealed the bag, make sure the sauce completely covers the pork. Leave in the fridge for at least 2 hours, preferably overnight 3 Preheat the BBQ, remove the pork from the bag and place on a tray, then spoon over the remaining sauce 4 Place pork steaks on the BBQ and cook for 3 minutes. Turn them over, brush with the marinade and cook for another 3 minutes or until the juices run clear. Discard any left over sauce as this has been in contact with raw meat. Remove the pork from the BBQ and rest for 2 minutes before serving with our Asian slaw. Tip: You can easily make this recipe vegan by using portabella mushrooms. Marinate the whole mushrooms for 1 hour. Grill on the BBQ for 3 minutes on each side, brushing with extra marinade as you grill.
