They held an amazing assembly to the whole school where they talked to all the other children about their condition. They even helped people understand about the symptoms to look out for and how to get diagnosed. But that wasn’t the end of their awareness raising – they also held a crazy hair day and a successful coffee morning too, where all the cakes were gluten free. Raising awareness about coeliac disease is especially important to Lianna and Layla as lots of people in their family have the condition as well. That means they already know lots about the gluten free diet. Lianna and Layla like to keep their lunches interesting so they have lots of different types of breads and fillings – from wraps to rolls and sandwich thins. Their mum also does a lot of batch cooking, making gluten free sausage rolls to go in their lunchbox with some ketchup for extra moisture and flavour. Tip LIANNA AND LAYLA’S CUPCAKES This recipe is from the girls’ grandma, who also has coeliac disease. It’s easy to make ahead for the whole week and very adaptable – try adding lemon extract or coffee for different flavours. Ingredients • 175g (6oz) dairy free spread • 175g (6oz) caster sugar • 3 eggs, beaten • 175g (6oz) gluten free self raising flour* Method 1 Preheat the oven to 180°C/350°F/Gas Mark 4 and prepare your cupcake cases. Cream together the spread and sugar in a bowl – an electric mixer is easiest. Add the eggs a little at a time, beating well with the mixer 2 Then gently fold in the flour with a metal spoon, a little bit at a time. Finish off with the mixer 3 Put a large spoonful in each cupcake case and bake for 12-15 minutes. These cakes are delicious as they are, but you can decorate with food dye and icing sugar or premade gluten free icing to save time.
