After feeling very poorly, the gluten free diet made him feel much better so he and his mum are passionate about teaching others about gluten free eating and why his diet is so important for his health. So when they got his Young Champions pack in the post, brave Charlie took it to school with him and made a presentation for his whole class of 32 children! Along with the activities and stickers in the pack it was a great success and everyone learned a lot about coeliac disease. Charlie and his mum also made a batch of yummy gluten free brownies so that everyone could try gluten free food and find out that it tastes just as nice as gluten containing food. Now all his friends want to come to his house to play and eat more gluten free brownies! To make his lunchbox extra healthy and packed with goodness, Charlie often takes cucumber and carrot sticks to school with hummus. A great balanced lunch when paired with a gluten free sandwich or wrap. CHARLIE’S FLAPJACK RECIPE This flapjack recipe is easy to make and very popular with all the family! A great treat for lunchboxes to keep tummies full to the end of the school day. Ingredients • 450g (15oz) gluten free oats* • 200-300g (7-10oz) golden syrup (depending on how sweet you want them) • 100g (3 ½ oz) melted butter • raisins or chocolate chips to taste, if you like Method 1 Preheat your oven to 180°C/350°F/Gas Mark 4. Mix up the oats with butter and golden syrup until they’re fully coated.
