14 WWW.COELIAC.ORG.UK BANANA PANCAKES WITH FRUIT Serves 2 Preparation Time 4 mins Cooking Time 5 mins Ingredients • 1 banana • 125g (4oz) gluten free self raising flour* • 1 egg • 150ml (5 fl oz) milk • oil for frying • 160g (5½oz) frozen fruit POTATO AND SAUSAGE FRITTATA Serves 2 Preparation Time 10 mins Cooking Time 20 mins Ingredients Boost the flavours by adding some mint: you can add dried mint to the egg and potato mix, or if using fresh scatter over the dish just before serving. If you prefer, add the peas into the egg mixture or serve on the side. This recipe can be easily doubled to feed the whole family. Plus the base recipe lends itself well to a whole range of toppings: why not try sliced banana, a simple fruit coulis or a drizzle of maple syrup? • 90g (3oz) red onions • 240g (8½oz) potatoes • 150g (5oz) sweet potatoes • 190g (7oz) peas • 5 eggs • 2 gluten free sausages*, sliced • 90g (3oz) Cheddar cheese Method 1 Mash the banana with the back of a fork, until it resembles a puree. Add boiling water to the frozen fruit (it can also be defrosted overnight in the fridge) 2 Put the flour into a large bowl and make a well in the middle. Then beat in the egg and add the milk to make a smooth batter 3 Add in the mashed banana and whisk until fully combined 4 On a medium heat, heat a little oil in a non-stick frying pan, enough to cover the bottom. Pour the batter into the pan to make circles of around 8-10cm diameter 5 When bubbles start to appear on the surface, flip the pancake and cook for 3 more minutes. Repeat until the batter is used up 6 Drain the fruit and serve with the pancakes. The sweetness of the fruit should mean you won’t need any additional sweetener.
